Preparation is the same for all 4 recipes:

PREPARATION

1. Pour the rinsed chickpeas onto one half of a tea towel. Fold the other half over on top of the chickpeas, and rub until the skins come off.

2. Place peeled chickpeas into a bowl, with the salt, cumin, garlic. Add red peppers/beetroot/pesto as required. Mix with a blender to break up the mixture.

3. Keep blending while adding lemon juice, olive oil, sesame oil, and water. Blend until smooth.

4. Serve with your tortilla chips, crisps, or raw vegetables.

Classic Hummus

CLASSIC HUMMUS

1 can chickpeas 425 g, drained and rinsed

½ teaspoon salt

½ teaspoon ground cumin

1 small garlic clove, minced

1 tablespoon lemon juice

1 tablespoon extra-virgin olive oil

¼ teaspoon sesame oil

60 ml water

Roasted Red Pepper Hummus

2) ROASTED RED PEPPER HUMMUS

1 can chickpeas 425 g, drained and rinsed

½ teaspoon salt

½ teaspoon ground cumin

1 small garlic clove, minced

1 500 g jar roasted red peppers, drained

1 tablespoon lemon juice

1 tablespoon extra-virgin olive oil

Beetroot Hummus

3) BEETROOT HUMMUS

1 can chickpeas 425 g, drained and rinsed

¾ teaspoon salt

½ teaspoon ground cumin

1 small garlic clove, minced

200 g sliced cooked beetroots, drained

1 tablespoon lemon juice

1 tablespoon extra-virgin olive oil

2 tablespoons water

Pesto Hummus

1 can chickpeas 425 g, drained and rinsed

¼ teaspoon salt

1 small garlic clove

½ teaspoon ground cumin

170 g basil pesto

1 tablespoon lemon juice

2 tablespoons water
